Nothing is better on a cold day than a bowl of yummy, hot soup. As the temps drop, this turkey soup—packed with veggies, nutrients, and protein—is perfect for a cold day. It’s quick to make and great to use for meal prep as you plan your lunches and dinners for the week!
INGREDIENTS
- 16 oz turkey breast (cooked and cut into ½ inch chunks)
- 2 cups wild rice (cooked)
- 3 tbsp butter
- ½ cup chopped celery
- ½ cup chopped yellow onion
- ½ cup chopped carrots
- ½ cup chopped mushrooms
- 3 tbsp flour
- 3 cups chicken broth
- 2 cups milk
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp pepper
DIRECTIONS
- In a large pan, over medium heat, melt the butter. Add celery, onion, carrots, and mushrooms. Sautee for 5 minutes. Add flour to vegetables and coat thoroughly.
- In a large pot combine chicken broth, milk, garlic powder, salt, pepper, and vegetable mixture. Bring to a boil. Add in cooked turkey breast and cooked rice. Simmer for 10 minutes.
